Why didn't Vegeta activate Ultra Ego again?

Vegeta has come a long way since his introduction in the Saiyan Saga of Dragon Ball ZFrom a destructive and evil Saiyan determined to conquer worlds, he has since formed a family and become one of the universe's most important protectors, even being one of the few chosen to represent his universe in the Tournament of Power, which saw the strongest fighters from all reality fight for survival.
In this arc, Goku achieves his Ultra Instinct form, a transformation he used to harness the Angel technique. Vegeta attempted this as well, but failed, later creating his own powerful Ultra Ego form in the Granolah arc that matched his rival's strength. However, in the arcs since then, Vegeta hasn't used the form even once for some reason, so let's take a look at why this is and why it could mean something even bigger is coming. Dragon Ball.

Granolah the Survivor Arc |
Ultra Ego's last appearance, at the time of writing, was at the end of the same arc in which it debuted. In his fight with Granolah, Vegeta eventually reveals an entirely new transformation that allows him to utilize the Energy of Destruction that only the Gods of Destruction can properly wield. This new transformation is not only the strongest in Vegeta's arsenal, but also finally brings him to the same level as Goku's Ultra Instinct.

However, much like his first use of Ultra Instinct, Vegeta's first Ultra Ego demonstrated his lack of training with the form. Because of this, he was unable to finish off Granolah despite dealing significant damage, instead causing the Cerealian to nearly kill them both in a massive attack. After this, the form was seen again at the end of the chapter in the fight against Gas and again when Frieza appeared. The Galactic Tyrant was so powerful that a single punch took down Goku and Vegeta's most powerful forms.
Where have you been since then?
After the end of the Granolah arc, the stage was set for the manga to retell the story of Dragon Ball Super: Super Hero film, where Vegeta played a rather minor role. Since this arc primarily served to bring Piccolo and Gohan back to the series' highest level, they were the central focus and had to take down Cell Max with the help of their new, powerful forms.
There was a side story about the pure-blooded Saiyans on Beerus's planet, but this was mainly to train Broly to keep his monstrous Super Saiyan powers under control. To show him what controlling his powers would be like, Whis instructed Goku and Vegeta to go through a sparring session without any ki blasts or power-ups, using only their base forms and ki control to give Broly a feel for what to fight for.
That's why Ultra Ego wasn't shown again during the Superhero movie. However, fans were left scratching their heads at the end of the manga version of the arc, when Vegeta finally fought Beast Gohan. It was surprising to see that instead of using his immensely powerful Ultra Ego to combat Gohan's strongest form, which was capable of competing with Ultra Instinct and Super Saiyan Broly, Vegeta opted for Super Saiyan Blue, leaving many fans perplexed.

Why we may not see Ultra Ego again:
Ultra Ego, despite being one of the strongest transformations in the series, can utilize the power of the Destroyer Gods, is still not a very reliable form due to its intrinsic tendency to take damage to become stronger. After realizing that he cannot revert to his egotistical self to use the form to its full potential, many fans believe Vegeta may have simply abandoned this transformation to find a new, much more stable one.
My apologies, Lord Beerus. I couldn't go back to being the callous and insensitive man I once was. This power of the God of Destruction was beyond the reach of a novice like me.
Since everyone who fought Beast Gohan did so in their most powerful forms, fans felt left out when Vegeta didn't. Many believe he'll train to unlock something much better, effectively saying goodbye to Ultra Ego. To fully harness the power of the Gods, one must place destruction above all else, and Vegeta realizes that's simply something he can't do.
Why we might see Ultra Ego again:
The easiest answer to why Vegeta didn't use Ultra Ego again is simply that he didn't need to. In the side story about him and Goku fighting on Beerus's Planet, the goal was to demonstrate Ki control in their base forms, so Ultra Ego was already out of the question for that. However, the reason he didn't use it against Gohan is likely more complex. Ultra Ego enhances the fighter's fighting style; exactly what Vegeta is.

It all comes down to how Vegeta had virtually no time to train this form. Just as Ultra Instinct Omen was taxing Goku's body and incomplete in every aspect except defense when it was first shown, the Ultra Ego arc could be quite similar, as it's most likely just an incomplete form that Vegeta hasn't mastered yet. Using it against Beast Gohan wouldn't have worked for a fight, as using it takes a heavy toll on his body. Eventually, once mastered, Ultra Ego will likely have a characteristic that makes Vegeta's body incredibly durable like Ultra Instinct, allowing him to take and deal damage much more effectively.
